Forleden lavede jeg denne forfriskende kålsalat, som er en opskrift af Tina Scheftelowitz, fundet hos Alt For Damerne. Mynte og ananas er allerbedste venner, og sammen med den sprøde kål og limedressingen blev det til en super skøn og frisk salat. Den smagte også super godt den følgende dag, så resterne kan også sagtens bruges i madpakken. Er du ikke til ananas kan du bruge mango i stedet.
½ hvidkålshoved
1 moden ananas
1-2 bundt mynte
2 spsk cashewnødder
DRESSING
3 lime, saft heraf
2 cm ingefær, fintrevet
1 spsk honning
salt og peber
Fjern de yderste kålblade og del hvidkålen i to. Skær stokken fra, og snit den ene halvdel ultra fint. Skær top og bund fra ananasen og skær skrællen af. Skær ananasen i skiver. Skær den hårde midte fra og del dem i tern på 1 cm x 1 cm. Pluk bladene af mynten, og hak dem groft. Rist cashewnødderne på en tør pande til de er gyldne, hak dem eventuelt groft. Bland kål, ananas, mynte og nødder i en stor skål. Rør ingredienserne til dressingen sammen og hæld den over salaten.
